Instructions

Add diced tomato and rice to the pan, stirring to coat the grains with the spice mixture. Pour in broth and bring to a boil. Lower heat, cover, and simmer for 20 minutes or until rice is cooked through. Set aside. Prepare the Spicy Plantain Bites: Peel plantains and cut into 1 inch pieces. In a shallow dish, whisk eggs. In another dish, combine flour, breadcrumbs, black pepper, and cayenne pepper (if using). Dip each plantain piece in egg, then dredge through the dry mixture. Heat oil in a deep frying pan to 350°F. Fry plantains until golden brown, turning occasionally for even browning. Remove from heat and let cool slightly on paper towels.
