Ingredients
1.5 lbs boneless, skinless chicken thighs
2 cups uncooked white rice
4 cups low
sodium chicken broth
1 small red onion, finely chopped
1 large avocado, peeled and pitted
3 tbsp fresh lime juice
1/2 cup packed fresh cilantro leaves
1 jalapeño pepper, seeds removed and finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp paprika
1/2 tsp ground coriander
Salt and pepper to taste
Olive oil for cooking
Instructions
In a large resealable plastic bag, combine chicken thighs with onion, jalapeño, garlic, cumin, paprika, coriander, salt, and pepper. Massage the spices into the chicken and let marinate for 30 minutes in the refrigerator.
Cook the rice according to package instructions using chicken broth instead of water. Set aside.
