Instructions
Preheat oven to 350°F (175°C).
In a medium bowl, mix crushed cookies and melted butter until well combined. Press the mixture into two 4 inch ramekins, forming an even crust layer.
Bake for 8 minutes or until set. Let cool completely on a wire rack.
In a small saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.
In a separate bowl, whisk egg yolks. Gradually add about 1/2 cup of the hot milk mixture into the yolks, whisking continuously to prevent curdling.
Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook for another 2 minutes or until slightly thickened.
Remove from heat and stir in vanilla extract.
Divide the vanilla pudding evenly over the cooled cookie crusts. Set aside.
