  • 1/2 cup soy sauce
  • 1/4 cup water
  • 6 cloves garlic, minced
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/4 cup cooking oil
  • 3 cups uncooked jasmine rice
  • 8 cloves garlic, minced for fried rice
  • 2 eggs, beaten
  • 2 tablespoons green onions, chopped
  • 2 tablespoons sesame seeds

Instructions

  1. In a large pan, combine vinegar, soy sauce, water, 4 cloves of minced garlic, salt, and pepper. Bring to a boil. Add chicken pieces and simmer until cooked through. Remove from heat and let it sit for about 30 minutes in the marinade.
  2. In a separate pan, heat oil over medium heat. Fry remaining 2 cloves of minced garlic until golden brown. Remove garlic and set aside for later use.
  3. Cook jasmine rice according to package instructions. Set aside.
  4. To make the fried rice, heat 1 tablespoon of oil in a pan over medium heat. Sauté the remaining 6 cloves of minced garlic until golden brown. Add beaten eggs and cook until set. Stir in cooked rice and green onions. Cook for about 2 minutes or until heated through.
  5. To serve, plate chicken adobo with fried rice on the side. Sprinkle fried garlic and sesame seeds on top of both dishes for added flavor and visual appeal.
