Instructions

  1. Begin by cooking the quinoa according to package instructions and set aside. Heat olive oil in a pan, add onions, garlic, and ginger, sautéing until translucent. Stir in turmeric, coriander, cumin powder, salt, and pepper, cooking for another 2 minutes. Add the cooked quinoa and spinach to the pan, stirring well to combine all flavors. Remove from heat, let cool slightly, then mix in cilantro and cashew cream. Form patties with the mixture and refrigerate for 30 minutes. In another pan, simmer tomatoes with sugar, red chili powder, and lemon juice to create the chutney. Cook the patties in a non stick skillet until golden brown on both sides. Serve the patties with the creamy tomato chutney and garnish with fresh cilantro leaves.
