Instructions

  1. Preheat oven to 350°F (175°C). Grease and line six 4 inch cake pans with parchment paper. In a large bowl, whisk together the sugar and egg yolks until pale and creamy. Stir in the mandarin orange juice, zest, and vanilla extract. In another bowl, sift together the flour and salt. Gradually add this mixture to the egg yolk mixture, stirring until well combined. In a separate large bowl, beat the egg whites until stiff peaks form. Fold this into the previous mixture gently but thoroughly. Divide the batter evenly among the prepared cake pans and bake for 20 25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely on wire racks. In a saucepan, heat the heavy cream over medium heat until it begins to steam. Pour this hot cream over the chopped white chocolate and let it sit for 1 minute. Stir until smooth and fully combined. Allow the ganache to cool slightly, then gently fold in the mandarin orange zest. Chill in the refrigerator for about 20 minutes or until thickened slightly. To assemble the cakes, place one cake layer on a serving plate and spread a generous amount of the chilled white chocolate ganache over it. Repeat with the remaining layers and ganache, ending with the last cake layer on top. Chill the assembled cake in the refrigerator for at least 1 hour before serving. Garnish with mandarin orange slices and enjoy!
