Ingredients

  • 2 ripe avocados
  • 4 slices of nitrate
  • free bacon
  • 2 large vine
  • ripened tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 lemon, juiced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup chopped red onion
  • 1/2 small red chili, deseeded and finely chopped (optional)
  • 1 tbsp balsamic vinegar glaze (optional)

Instructions

  1. Preheat a grill or grill pan over medium heat. Lay the bacon on the grill and cook for 3 4 minutes per side, or until crispy. Remove and set aside.
  2. Slice the tomatoes into 1/2 inch thick slices and brush with olive oil. Season with salt and pepper. Place them on the grill and cook for 2 3 minutes per side, or until tender.
  3. Meanwhile, in a bowl, mash the avocados with lemon juice, salt, and pepper to taste.
  4. To serve, divide the mashed avocado between two plates, spreading it out to resemble a bed of "toast." Place grilled tomato slices on top of the avocado and then lay the crispy bacon over the tomatoes.
  5. Finish with a drizzle of balsamic vinegar glaze (if using), fresh cilantro leaves, chopped red onion, and chili (if using).
