Ingredients

  • 2 cups chopped bell peppers (red, yellow, or orange)
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked black beans
  • 1/2 cup corn kernels, fresh or canned
  • 1 small red onion, diced
  • 1 jalapeño pepper, seeded and finely chopped (optional)
  • 1 avocado, sliced
  • 4 large eggs
  • 1/4 cup shredded cheddar cheese (or vegan cheese alternative)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • Fresh cilantro leaves, for garnish

Instructions

  1. In a large non stick skillet or pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped bell peppers, diced red onion, and jalapeño (if using) to the skillet and cook for about 5 minutes until softened. Season with salt and pepper.
  2. Stir in the smoked paprika and ground cumin, and cook for another minute to incorporate the spices.
  3. Add the corn kernels and cherry tomatoes to the skillet, stirring well to combine. Cook for an additional 3 minutes.
  4. Incorporate the cooked black beans into the mixture and stir gently. Taste and adjust seasoning if necessary.
  5. Make three small indentations in the vegetable mixture, cracking an egg into each indentation. Sprinkle the shredded cheddar cheese over the top of the eggs and the entire skillet.
  6. Lower the heat to low and cover the skillet with a lid or foil, allowing the eggs to poach for about 5 7 minutes or until desired egg consistency is reached.
  7. Carefully remove the skillet from heat and let it rest for 1 minute before serving.
  8. Drizzle the remaining tablespoon of olive oil over the dish and garnish with fresh cilantro leaves.
