  • 2 tablespoons tomato paste
  • 1/4 cup chopped fresh cilantro
  • Zest and juice of 1 lime
  • Salt, to taste

Instructions

  1. In a large saucepan, bring 3 cups of water to a boil with a pinch of salt. Add the basmati rice, cover, and cook according to package instructions until al dente. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onion and sauté until golden brown, about 7 10 minutes.
  3. Add the minced garlic and sauté for another minute, until fragrant.
  4. Stir in the sliced mushrooms, cumin, coriander, cardamom, cinnamon, ginger, and black pepper. Cook for 5 minutes, or until the mushrooms are tender and have released their juices.
  5. Add the vegetable broth and tomato paste to the skillet, stirring well to combine. Bring to a simmer, then reduce heat and cook for about 10 minutes, allowing the flavors to meld together.
  6. In a separate bowl, mix together the cooked basmati rice, chopped cilantro, lime zest, and lime juice, adjusting salt as needed.
