Nut allergies: The recipe contains ground peanuts. You may replace them with almond flour for a nut-free version.
Ingredients
- 1 lb beef, cut into bite
- sized pieces 1 cup cauliflower rice 2 medium zucchinis, spiralized 4 tbsp coconut oil 3 tbsp ground peanuts 2 tbsp ground ginger 2 tbsp ground cameroon pepper (aji) Salt and black pepper, to taste 1 tsp ground nutmeg 1/2 cup fresh parsley, chopped 2 tbsp cilantro, finely chopped
Instructions
- In a mixing bowl, combine the ground ginger, ground cameroon pepper, salt, black pepper, and ground nutmeg to make the suya spice blend.
- Rub the spice blend onto the beef pieces and let them marinate for 30 minutes.
- Preheat your air fryer to 400°F (200°C).
- Air fry the marinated beef pieces for 15 20 minutes, or until they reach your desired level of doneness.
- In a large skillet, heat 2 tablespoons of coconut oil over medium heat and sauté the cauliflower rice for about 7 8 minutes, or until tender. Season with salt and pepper to taste.
- In another skillet, heat 2 tablespoons of coconut oil and sauté the spiralized zucchini noodles for about 4 5 minutes, or until al dente. Season with salt and pepper to taste.
- Combine the cooked cauliflower rice and zucchini noodles in a serving dish and garnish with chopped parsley and cilantro.
- Arrange the air fried suya bites on top of the rice and noodles, and serve immediately.
