Ingredients

  • ounce) salmon fillets, with skin on 2. 1/4 cup Keto Caribbean Jerk Seasoning Mix 3. 1 large head of cauliflower, riced 4. 2 cups fresh cilantro leaves, chopped 5. Zest and juice of 4 limes 6. 1/2 cup red onion, finely chopped 7. 1/4 cup green onions, thinly sliced 8. 1/4 cup avocado oil, divided 9. Salt and pepper, to taste 10. Optional: extra lime wedges for garnish

Instructions

  1. Prepare the Keto Caribbean Jerk Seasoning Mix (see recipe below)
  2. Rinse cauliflower, remove leaves, and rice it using a food processor or box grater
  3. In a large bowl, combine riced cauliflower, chopped cilantro, lime zest, lime juice, red onion, green onions, and 1/4 cup of avocado oil. Season with salt and pepper to taste, then set aside
  4. Pat dry salmon fillets and season both sides generously with jerk seasoning mix. Allow to rest for 15 minutes
  5. Heat a large non stick skillet over medium heat. Add remaining 1/4 cup of avocado oil. Once hot, add the seasoned salmon fillets skin side down, and cook for 4 5 minutes or until golden brown. Flip and cook an additional 3 4 minutes or until cooked through
  6. Serve jerk salmon over cilantro lime cauliflower rice and garnish with optional lime wedges Keto Caribbean Jerk Seasoning Mix:

  9. 1/4 cup ground black pepper
  10. 1/4 cup nutmeg, freshly grated

  14. 2 tablespoons dried rosemary
