2 ripe avocados
1 cup cucumber, thinly sliced
1/2 cup cooked and seasoned sushi rice (made with keto

1 tbsp sesame seeds, toasted
1 tsp black sesame seeds
2 tbsp low
sodium soy sauce or tamari for keto diet
Fresh cherry tomatoes and edible flowers for garnish (optional)
Instructions
a. Prepare the keto friendly sushi rice according to your recipe, let it cool down. b. Slice avocados in half, remove the seed, and scoop out the flesh into a bowl. Mash it with a fork, add a pinch of salt and set aside. c. Place one nori sheet on a bamboo sushi mat or a clean surface. Spread a thin even layer of sushi rice across two thirds of the nori, leaving an edge for sealing. d. Arrange cucumber slices in a single line on the rice, followed by a line of mashed avocado, and sprinkle with toasted sesame seeds. e. Carefully roll the sushi using the bamboo mat or your hands, applying gentle pressure to form a tight roll. Use the edge of the nori to seal it. f. Slice each roll into bite sized pieces and transfer them onto a serving plate. Garnish with fresh cherry tomatoes and edible flowers if desired.
