  • 12 pitted dates, finely chopped 1 cup almond flour 1/2 cup raw almonds 1/4 cup coconut oil, melted 1/4 cup maple syrup 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground nutmeg A pinch of sea salt

Instructions

  1. a. Preheat the oven to 350°F (180°C). Line an 8 inch square baking dish with parchment paper, leaving an overhang for easy removal. b. In a food processor, combine the almonds and almond flour. Pulse until the mixture resembles coarse crumbs. Set aside. c. In a medium saucepan, add the dates, maple syrup, coconut oil, cinnamon, ginger, nutmeg, and salt. Cook over low heat for 5 minutes, stirring occasionally, until the mixture thickens into a sticky consistency. Remove from heat and allow to cool slightly. d. Add the cooled date mixture to the food processor with the almond crumb mixture. Pulse until combined and forms a dough like consistency. e. Press the dough evenly into the prepared baking dish, ensuring an even layer. Bake for 20 25 minutes, or until golden brown around the edges. Allow to cool completely in the pan on a wire rack. f. Once cooled, use the parchment paper to lift the bars out of the pan. Cut into 6 rectangular bars.
