Instructions

  1. Prepare the keto friendly cauliflower rice by pulsing caulifricus in a food processor until it reaches a rice like texture. Season with sesame oil, rice vinegar, salt, and pepper. Set aside.
  2. Thinly slice the tuna into long strips and the beef fillet into thin ribbons. Set aside.
  3. Cut nori sheets or almond flour sheets into halves. Place a sheet on a bamboo mat or clean kitchen towel. Spread an even layer of cauliflower rice over the nori, leaving about 1 inch of space at the top edge.
  4. Arrange tuna and beef slices in alternating rows across half of the rice covered nori.
  5. Roll up the sushi tightly using the bamboo mat or kitchen towel, applying gentle pressure to ensure a tight roll. Use a sharp knife to cut into 6 equal pieces.
