  2. Slice each tomato into 3/4 inch thick slices and lay them on paper towels to drain excess moisture.
  3. Spread a thin layer of the cottage cheese mixture on one side of each slice of toasted bread.
  4. Arrange the tomato slices on top of the cheese layer, slightly overlapping if necessary. e) Drizzle a little olive oil over the tomatoes and season with additional salt and pepper as desired. f) Broil in the oven for 3 4 minutes or until the cheese is bubbly and golden brown.
