  • lipped mussels, cleaned and debearded 1 lb (450g) New Zealand prawns, peeled and deveined 12 fresh New Zealand oysters, shucked and on the half shell 1 cup (240ml) white wine 2 tbsp (30ml) unsalted butter Salt and pepper, to taste Fresh parsley, for garnish Lemon wedges, for serving Lemon aioli: 1/2 cup (120ml) mayonnaise 2 tbsp (30ml) fresh lemon juice 1 garlic clove, minced Salt and pepper, to taste

Instructions

  1. a. In a large pot, heat the white wine over medium heat until simmering. Add the mussels, cover, and cook until they open, about 5 minutes. Discard any unopened mussels. b. Remove the mussels from the shells and set aside. Discard the empty shells. c. In a large skillet over medium heat, melt the butter. Add the prawns and cook until pink and opaque, about 2 3 minutes per side. Season with salt and pepper to taste. d. To make the lemon aioli, whisk together the mayonnaise, lemon juice, minced garlic, salt, and pepper in a small bowl. e. Arrange the mussels, prawns, oysters, and lemon aioli on a large platter or individual plates. Garnish with fresh parsley and serve with lemon wedges.
