Ingredients
1 large cauliflower, cut into florets
2 tbsp olive oil
1 onion, finely chopped
1 garlic clove, minced
1 cup vegetarian mince (lentils or TVP)
1 tbsp curry powder
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1/2 cup vegetable stock
Salt and pepper, to taste
For the Golden Raisin Sauce:
3 tbsp butter
3 tbsp flour
2 cups milk
1/2 cup golden raisins
Salt and pepper, to taste
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
Stir in vegetarian mince, curry powder, cinnamon, allspice, and nutmeg. Cook for 5 minutes, stirring occasionally.
Pour in the vegetable stock and cook until absorbed. Season with salt and pepper to taste. Remove from heat and set aside.
Steam cauliflower florets until tender but still hold their shape. Drain well and stuff each floret with the mince mixture. Place on the prepared baking sheet.
Bake for 20 25 minutes, or until golden brown.
For the Golden Raisin Sauce: In a saucepan, melt butter over medium heat. Whisk in flour to create a roux. Slowly add milk, stirring constantly. Cook until thickened. Stir in raisins and season with salt and pepper.
