8 oz chicken breast, boneless & skinless
1 tbsp ghee
2 cloves garlic, minced
1 large onion, diced
2 bell peppers, sliced
4 tbsp sweet Hungarian paprika
1 cup chicken broth
Salt & pepper, to taste
8 oz cauliflower rice
1 tbsp olive oil
Fresh parsley, for garnish
Instructions
In a large skillet, heat the ghee over medium heat. Add chicken and cook until golden brown on both sides. Remove from skillet and set aside. In the same skillet, add garlic, onion, and bell peppers. Cook until softened. Stir in paprika, and cook for 1 minute to release its aroma. Return chicken to skillet and pour in chicken broth. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes. Meanwhile, prepare cauliflower rice according to package instructions. Heat olive oil in a separate pan, add the cooked cauliflower rice and season with salt and pepper. Cook until golden brown. To serve, spoon cauliflower rice onto plates, then top with chicken paprikash. Garnish with fresh parsley.
