  • 1 ripe plantain
  • 1 medium avocado
  • 4 large eggs
  • 1/2 teaspoon salt, divided

  • 2 tablespoons coconut oil
  • 2 cups fresh mixed berries

Instructions

  1. In a medium bowl, whisk together almond milk and chia seeds. Cover and refrigerate for at least 1 hour or overnight to create chia pudding.
  2. Peel the plantain and slice into 1/2 inch thick rounds. Heat coconut oil in a non stick skillet over medium heat. Add plantains, cooking until golden brown on each side, about 4 minutes per side. Set aside.
  3. In another non stick skillet, cook eggs to desired preference. Season with 1/8 teaspoon salt and a pinch of cinnamon and nutmeg.
  4. Halve the avocado, remove pit, and slice into thin wedges.
