Instructions
In a large, deep skillet or paellera, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened, about 5 minutes.
Stir in the red bell pepper, peas, paprika, saffron, salt, and black pepper. Cook for an additional 3 4 minutes.
Add the Arborio rice, stirring to coat with the vegetable mixture. Pour in the gluten free vegetable broth.
Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
While the rice cooks, prepare the chicken by combining the rosemary, thyme, lemon zest, and lemon juice in a bowl. Season with salt and black pepper to taste. Coat the chicken breasts evenly with the herb mixture, cover, and refrigerate for 30 minutes.
Preheat a grill or grill pan to medium high heat. Grill the marinated chicken until cooked through, about 5 7 minutes per side. Remove from heat and let rest for a few minutes before slicing.
