Instructions

  1. In a bowl, cover peanuts with water and soak for 2 hours. Drain and set aside.
  2. Roast bell peppers over an open flame or grill until charred. Peel, seed, and chop.
  3. Chop onion and garlic. In a blender, combine peanuts, roasted bell peppers, onion, and garlic. Blend until smooth.
  4. Heat vegetable oil in a large pot over medium heat. Add the peanut mixture and cook for 5 minutes, stirring constantly.
  5. Add vegetable broth and season with salt and pepper. Simmer for 20 minutes or until thickened.
  6. Press tofu between paper towels to remove excess water. Cut into steak like slices.
  7. In a bowl, mix peanut butter with chopped suya spices and vegetable oil. Season with salt and pepper.
  8. Coat tofu steaks in the peanut butter mixture, pressing firmly to adhere.
  9. Heat 2 tablespoons of vegetable oil in a pan over medium heat. Cook tofu steaks until golden brown on both sides.
  10. Rinse rice and drain. In a blender, puree rice with coconut milk and vegetable broth until smooth. Set aside.
  11. Chop onion and bell pepper. In a large pot, heat vegetable oil over medium heat. Add onion and bell pepper, sautéing until softened.
  12. Stir in the rice mixture and season with salt and pepper. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until rice is tender and liquid is absorbed.
