Instructions

  2. Season chicken breasts with salt and pepper, and grill or bake them until they reach an internal temperature of 165°F (74°C) for at least 8 minutes per side.
  3. Peel and cube the sweet potato, then boil it in water until tender. Drain, mash with a little coconut oil, and season to taste.
  4. In a blender or food processor, combine peanuts, onion, bell pepper, garlic, ginger, tomato paste, chicken broth, smoked paprika, cayenne pepper, ground cinnamon, salt, and pepper. Blend until smooth.
  5. Heat coconut oil in a pan over medium heat. Add the peanut mixture and cook for 8 10 minutes, stirring occasionally.
  6. Slice grilled chicken and serve over the peanut stew, garnished with fresh cilantro.
