Ingredients

  • 4 large red or yellow bell peppers
  • 8 oz crumbled feta cheese
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/3 cup cherry tomatoes, halved
  • 1 small red onion, finely diced
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Freshly ground black pepper, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off of the bell peppers and remove seeds and membranes.
  3. In a large mixing bowl, combine feta cheese, olives, dill, parsley, cherry tomatoes, red onion, olive oil, garlic, salt, and pepper. Mix well.
  4. Stuff each bell pepper with the feta mixture, pressing down gently to ensure it's filled evenly.
  5. Place stuffed peppers in a baking dish and bake for 25 30 minutes or until peppers are tender and slightly charred.
  6. Remove from oven, garnish with freshly ground black pepper, and serve immediately.
