1 can (20 oz) pineapple slices, drained and juice reserved
1 cup maraschino cherries, drained
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsweetened coconut milk

1 bamboo steamer
Instructions
Prepare the bamboo steamer by lining it with parchment paper, leaving a slight overhang on all sides for easy removal after baking.
In a small saucepan, melt 4 tablespoons of butter and pour into the lined bamboo steamer, spreading evenly to cover the entire bottom surface. Sprinkle 3/4 cup granulated sugar evenly over the buttered surface.
Arrange pineapple slices in a single layer on top of the sugar, then place a maraschino cherry at the center of each pineapple slice. Reserve any remaining pineapple for other uses or garnish.
In a large mixing bowl, whisk together flour, 1/4 cup granulated sugar, baking powder, and salt. In another bowl, combine coconut milk, vanilla extract, and eggs. Slowly add the wet ingredients to the dry ingredients, stirring until just combined.
Carefully pour the batter over the pineapple and cherries in the bamboo steamer, ensuring an even layer on top. Tap the steamer gently on the countertop to remove any air bubbles.
