  • 2 cups mixed fresh herbs (parsley, dill, cilantro, and mint), chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup English cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix together dill, parsley, cilantro, cumin, coriander, salt, pepper, turmeric, cinnamon, and cloves.
  3. Rub the chicken with olive oil, then evenly coat with the herb and spice mixture.
  4. Place chicken in a single layer on a baking sheet lined with parchment paper. Roast for 35 40 minutes or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before serving.
  5. In a medium saucepan, combine rice, water or broth, saffron threads, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18 20 minutes or until liquid is absorbed and rice is tender. Fluff with a fork and let rest for 5 minutes before serving.
  6. In a large bowl, combine mixed herbs, cherry tomatoes, cucumber, and red onion.
  7. In a separate small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour dressing over salad and toss to combine.
