Instructions
Prepare the vegetables by julienning them into thin strips.
Fill a large bowl with warm water, submerge one rice paper at a time, and soften for about 30 seconds.
Place a softened rice paper on a clean surface, and arrange a small portion of assorted vegetables and protein in the center.
Fold the rice paper over the filling, tightly roll it up into a cylinder shape, and seal the edges by brushing them with water.
Repeat for all spring rolls and set them aside on a serving platter.
In a mixing bowl, combine ground peanuts, lime juice, coconut aminos, honey or maple syrup, sriracha, minced garlic, grated ginger, and salt and pepper to taste. Whisk until smooth.
