Ingredients

  • 1 cup uncooked jasmine rice
  • 2 cups water
  • 2 tablespoons coconut oil, divided
  • 1 small red onion, finely chopped
  • 1 medium carrot, peeled and grated
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed and thinly sliced
  • 1 cup bamboo shoots, sliced
  • 4 cups mixed leafy greens (e.g., kale, spinach, or bok choy)
  • 1/2 cup roasted peanuts, coarsely chopped
  • 2 tablespoons lime juice
  • Salt and pepper, to taste
  • Fresh cilantro leaves, for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 20 minutes or until the rice is cooked through. Remove from heat and let it stand for 5 minutes before fluffing with a fork.
  2. In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the chopped onion and cook until softened and slightly golden, about 5 minutes.
  3. Stir in the grated carrot and minced garlic, cooking for another 2 3 minutes or until fragrant.
  4. Add the green beans and bamboo shoots to the skillet. Cook for 3 4 minutes, or until the vegetables are crisp tender.
  5. Stir in the mixed leafy greens and cook until wilted, about 1 2 minutes. Season with salt and pepper to taste.
  6. In a separate pan, heat the remaining tablespoon of coconut oil over medium heat. Add the cooked rice and gently mix to combine with the vegetables. Cook for 3 4 minutes, or until heated through and slightly crispy.
  7. Divide the rice among four plates, then top with the vegetable mixture. Sprinkle each serving with chopped roasted peanuts and drizzle with lime juice. Garnish with fresh cilantro leaves before serving.
