1 lb boneless, skinless chicken breasts, cut into bite
sized pieces 1 cup unsweetened shredded coconut 1/2 cup all
purpose flour 2 large eggs, beaten 1 cup breadcrumbs 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon ground turmeric Salt and pepper, to taste Vegetable oil, for frying
Instructions
In a shallow dish, mix together the flour, salt, pepper, cumin, coriander, and turmeric.
In another shallow dish, beat the eggs.
Place the shredded coconut in a third shallow dish.
Place the breadcrumbs in a fourth shallow dish.
Coat each chicken piece in the flour mixture, then dip in egg, and roll in coconut, followed by breadcrumbs. Repeat the process to double coat the chicken for extra crunch.
Heat oil in a deep frying pan over medium heat.
Fry the chicken bites until golden brown and cooked through, about 4 5 minutes per side. Drain on paper towels.
Serve immediately with your favorite dipping sauce.
