Ingredients

  • 200 grams firm tofu
  • 1 cup vegetable oil
  • 4 cups cooked rice
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 large carrots, julienned
  • 2 medium bell peppers, thinly sliced
  • 1 cup cabbage, shredded
  • 8 pieces lumpia wrappers
  • Salt and pepper to taste
  • Soy sauce for dipping
  • Cooking oil spray

Instructions

  1. Prepare the Tofu Scramble by crumbling the tofu into a non stick pan and cook over medium heat, stirring occasionally until golden brown. Season with salt and pepper to taste. Set aside.
  2. Heat 1 tablespoon of vegetable oil in another non stick pan over medium heat. Sauté onions and garlic until fragrant and translucent. Add the carrots and bell peppers, cooking for 4 5 minutes or until slightly softened. Stir in the cabbage and cook for an additional 2 minutes. Set aside.
  3. Prepare the Garlic Fried Rice by heating 1 tablespoon of vegetable oil in a large non stick pan over medium heat. Add the cooked rice, breaking up any clumps with a spatula. Sauté the rice for 2 3 minutes, stirring constantly to prevent sticking. Add the onion and garlic mixture, stirring well to combine. Season with salt and pepper to taste.
  4. Lay out lumpia wrappers on a flat surface. Place a spoonful of the vegetable mixture in the center of each wrapper, folding the wrapper into a triangle shape. Seal the edges and set aside.
  5. Spray a non stick pan with cooking oil spray and heat over medium heat. Pan fry the lumpia until golden brown and crispy on all sides.
  6. Assemble the feast by placing a portion of garlic fried rice on a plate, topping it with the Tofu Scramble. Arrange 3 Lumpiang Gulay on the side, and serve with soy sauce for dipping.
