Ingredients
2 cups cassava flour (gluten

1 cup glutinous rice flour (gluten
free)
4 cups water
1 large onion, chopped
1 green bell pepper, chopped
2 ripe tomatoes, chopped
2 cups spinach, chopped
1 cup palm nuts, shelled and crushed (or substitute with blanched almonds)
3 cloves garlic, minced
2 tablespoons palm oil or vegetable oil
Salt to taste
Instructions
a. In a large mixing bowl, combine cassava and glutinous rice flour with 4 cups of water. Mix until well combined, then let the mixture sit for about 30 minutes to allow the flours to absorb the water. b. While the flour mixture is resting, heat oil in a large pot over medium heat. Add onions and garlic, sautéing for 2 3 minutes until fragrant and slightly translucent. c. Introduce green bell pepper and tomatoes to the pot. Cook for another 5 minutes, stirring occasionally. d. Stir in palm nuts or almonds, spinach, and salt. Continue cooking until all ingredients are well combined and the vegetables have softened. e. Gradually add water to the vegetable mixture, ensuring a desirable stew consistency is achieved. Simmer for 10 15 minutes on low heat. f. Bring a large pot of water to a boil. Slowly pour the flour mixture into the boiling water while constantly stirring. Continue cooking and stirring until the mixture thickens and forms dough like balls. g. Remove fufu dough from heat and allow it to cool for a few minutes before dividing into 2 servings.
