Instructions
Preheat oven to 350°F (175°C).
In a medium bowl, mix together gluten free graham cracker crumbs, granulated sugar, and melted butter until well combined.
Press the mixture into the bottom of four 4 inch tartlet pans or small ramekins to create a base for your mousse.
Bake the tartlet bases for 10 minutes or until golden brown. Remove from oven and let cool completely on a wire rack.
In a large bowl, whisk together heavy whipping cream, sweetened condensed milk, vanilla extract, and lime juice until soft peaks form.
Peel and pit the mangoes, then blend into a smooth puree in a food processor or blender. Fold the mango puree into the whipped cream mixture gently, taking care not to overmix.
Spoon the mango mousse into the cooled tartlet bases and smooth the tops.
Chill the filled tartlets in the refrigerator for at least 2 hours or until set.
Garnish with fresh berries before serving, if desired.
