  • 1 small yellow bell pepper, chopped

  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander

  • Salt to taste
  • 6 wooden skewers

Instructions

  1. In a large bowl, combine mushrooms, bell peppers, and onion.

  3. Preheat a grill or grill pan to medium high heat. Thread the marinated vegetables onto skewers, leaving some space between each piece.
  4. Grill the skewers for 5 7 minutes per side, until tender and slightly charred.
