  • free chickpeas, soaked overnight
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

  • 1/2 teaspoon ground coriander

  • Water, as needed

Instructions

  1. Drain and rinse the soaked chickpeas well. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper. Blend until the mixture forms a slightly chunky paste. Scoop out 1 inch balls of the falafel mixture and gently press them into round shapes. Heat olive oil in a pan over medium heat, and fry the falafels until they are golden brown on all sides, around 3 4 minutes per side. Remove from the heat and let them cool slightly. For the tahini sauce, whisk together the tahini paste, lemon juice, garlic, salt, and pepper in a small bowl. Gradually add water to achieve your desired consistency. Set aside. To assemble, serve the falafel bites on a plate with the tahini sauce drizzled over them. Garnish with additional parsley or cilantro leaves for added color and flavor.
