Ingredients

  • 1 cup shredded coconut
  • 2 cups grated cassava
  • 1/4 cup almond flour
  • 1/4 cup coconut oil
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey or maple syrup (for Paleo)
  • A pinch of sea salt

Instructions

  1. In a large mixing bowl, combine the shredded coconut, grated cassava, almond flour, and a pinch of sea salt. Mix well until all ingredients are fully incorporated.
  2. In a medium saucepan, melt the coconut oil over low heat. Add the dry mixture to the melted coconut oil and stir continuously for 5 7 minutes or until it forms a dough like consistency.
  3. Gradually add the coconut milk while continuing to stir the mixture. Once all the coconut milk has been added, bring the mixture to a simmer over medium heat. Cook for another 5 minutes, then remove from heat and stir in the vanilla extract and honey or maple syrup.
  4. Form the dough into round shapes using your hands and place them on a serving plate. Drizzle any remaining sauce over the top of the fufu balls.
