  • 1. 2 cups dry ful medames (Egyptian fava bean stew) 2. 2 cups falafel mix 3. 1 large red onion, thinly sliced 4. 1 cucumber, thinly sliced 5. 1 cup cherry tomatoes, halved 6. 1/2 cup fresh parsley, chopped 7. 1/2 cup fresh dill, chopped 8. 1/2 cup fresh mint, chopped 9. 1/4 cup olive oil 10. 1 tablespoon ground cumin 11. 1 tablespoon ground coriander 12. Salt and pepper, to taste 13. Lemon wedges for serving

Instructions

  1. Prepare the ful medames according to package instructions. Set aside to cool.
  2. Prepare falafel mix as directed, then shape into small balls and fry in olive oil until golden brown. Drain on paper towels.
  3. In a large serving dish, create a base layer with half of the cooked ful medames.
  4. Sprinkle cumin and coriander evenly over the ful medames layer.
  5. Add a layer of falafel balls on top of the spiced ful medames.
  6. Arrange onion slices around the edges of the dish, followed by a layer of cherry tomatoes in the center.
  7. Scatter fresh herbs (parsley, dill, and mint) over the falafel layer.
  8. Drizzle olive oil over the entire tower and season with salt and pepper to taste.
  9. Serve immediately with lemon wedges on the side for added zest.
