Instructions

  2. In a saucepan over medium heat, combine sugar, water, orange blossom water, lemon juice, butter, cinnamon, cardamom, and salt. Stir until the sugar has dissolved completely.
  3. Increase heat to high, and bring the mixture to a boil. Continue boiling until it reaches 248°F (120°C) on a candy thermometer, approximately 15 minutes.
  4. Remove from heat and let it cool for about 5 minutes. Slowly add the cornstarch paste while stirring continuously to avoid lumps. Return to medium heat, stirring constantly, until the mixture thickens to the consistency of a soft putty.
  5. Fold in the chopped pistachios, then set aside to cool slightly and firm up.
  6. Preheat oven to 350°F (175°C). Lay out a sheet of phyllo dough on a clean surface. Brush with the beaten egg, then sprinkle some cooled Turkish delight mixture in a line along the shorter edge of the dough. Roll the dough into a tight cigar shape, and place it seam side down on a parchment lined baking sheet.
  7. Repeat with the remaining phyllo sheets and filling until all ingredients are used up. Bake for 15 20 minutes, or until golden brown and crispy.
  8. Let the cigar rolls cool slightly, then dust with confectioners' sugar before serving.
