Instructions

  1. Step 1: In a large pot or saucepan, heat the cooking oil over medium heat. Add the onions and bell pepper, sautéing until they become soft and translucent, about 5 minutes. Step 2: Stir in the tomato paste, ginger, cumin, paprika, and cayenne (if using), cooking for another 2 3 minutes to release the aroma of the spices. Step 3: Add the chopped tomatoes and vegetable broth, stirring well to combine. Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes, allowing flavors to meld. Step 4: Rinse the rice thoroughly under cold water before adding it to the pot with the vegetables and broth. Stir well to ensure the rice is evenly coated with the spice mixture. Cover the pot and let it cook for about 15 20 minutes, or until the rice has absorbed all the liquid and is cooked through. Step 5: While the rice is cooking, prepare the vegetables by washing and cutting them into bite sized pieces. Set aside. Step 6: Once the rice is cooked, fold in the vegetables and season with salt and pepper to taste. Cover and let it cook for another 5 minutes or until the vegetables are tender but still have a slight crunch. Step 7: Serve the vegan jollof rice bowl immediately, garnished with fresh parsley and lemon wedges on the side.
