  5. In a separate bowl, mix together maize flour and milk to form a dough. Knead until smooth and pliable.
  6. Roll the dough into small balls, approximately the size of a golf ball, and set aside.
  7. Add remaining oil to a separate pan and heat over medium high heat. Once hot, add the seasoned chicken pieces and cook until browned and cooked through.
  8. To serve, place a bed of collard greens on each plate, top with chicken, and surround with mashed ugali balls. Garnish with fresh cilantro for an extra burst of flavor and color.
