Ingredients
- 2 slices of whole grain bread
- 2 ripe avocados
- 1/2 cup cooked black beans
- 1 cup plant
- based chorizo
- 1/4 cup cherry tomatoes, halved
- 1 tbsp lime juice
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh cilantro leaves for garnish
Instructions
- Toast the bread slices until golden brown.
- In a bowl, mash the avocados with lime juice, salt, and pepper.
- Spread the mashed avocado on top of each toast slice.
- Warm up the plant based chorizo in a pan or oven according to package instructions.
- In another pan, heat the black beans until hot.
- Arrange the warmed plant based chorizo and black beans on top of the avocado toast.
- Top with cherry tomatoes and garnish with fresh cilantro leaves.
- Drizzle with olive oil before serving.
