  • 6 large bell peppers (assorted colors)
  • 1 lb ground beef
  • 1 cup cooked brown rice
  • 1 cup shredded cheddar cheese
  • 1 can black beans, rinsed and drained

  • 1 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Cut the tops off of the bell peppers and remove seeds and membranes.
  3. In a skillet, cook ground beef until browned, then drain excess fat.
  4. Add onion, garlic, chili powder, cumin, salt, and pepper to the skillet, cooking until fragrant.
  5. Stir in cooked rice, black beans, and half of the shredded cheddar cheese.
  6. Stuff each bell pepper with the meat mixture and place them in a baking dish.
  7. Bake for 25 30 minutes or until peppers are tender.
  8. Remove from oven and sprinkle with remaining cheddar cheese.
  9. Broil for 2 4 minutes or until cheese is melted and bubbly.
  10. Garnish with fresh cilantro and serve with lime wedges.
