8 chicken tenderloins
1 pineapple, peeled, cored and cut into 1
inch chunks
2 cups jasmine rice
1 can (13.5 oz) coconut milk
1 cup fresh or frozen mango, diced
1/2 red onion, finely chopped
1/2 red bell pepper, finely chopped
1/4 cup cilantro, chopped
1/4 cup green onions, thinly sliced
1/4 cup lime juice
Salt and pepper, to taste

Instructions
In a large mixing bowl, combine chicken tenderloins and pineapple chunks with the zesty pineapple sauce (ingredient list follows). Cover and refrigerate for at least 2 hours or overnight.
In a medium saucepan, combine jasmine rice, coconut milk, and water (ratio 1:13) according to package instructions. Bring to a boil, reduce heat to low, cover, and simmer until the rice is tender and has absorbed all the liquid, about 18 20 minutes.
While the rice cooks, prepare the mango salsa by combining diced mango, red onion, red bell pepper, cilantro, green onions, lime juice, salt, and pepper in a mixing bowl. Stir well and set aside.
Preheat an outdoor grill or grill pan to medium high heat. Thread the marinated chicken and pineapple chunks onto wooden skewers, leaving some space between each piece. Grill for 6 8 minutes per side, or until the internal temperature of the chicken reaches 165°F (74°C).
Once the rice is cooked, fluff it with a fork and let it rest for a few minutes to absorb any remaining liquid.
