Ingredients

  • 2 lbs pork belly, skin removed
  • 1 cup almond flour
  • 2 tbsp paprika
  • 1 tsp ground black pepper
  • 1 tsp sea salt
  • 1/4 tsp cayenne pepper (optional)
  • 1 egg, beaten
  • 2 cups olive oil for frying For the Garlic Herb Sauce:
  • 1/2 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a shallow dish, mix almond flour, paprika, black pepper, sea salt, and cayenne pepper (if using).
  2. Slice the pork belly into 1/4 inch thick strips.
  3. Dip each strip of pork belly in the beaten egg, then dredge it in the almond flour mixture to coat evenly.
  4. In a deep frying pan, heat olive oil over medium high heat until shimmering.
  5. Carefully add the coated pork belly strips to the hot oil and fry for 2 3 minutes per side or until golden brown and crispy. Remove from pan and place on paper towels to drain excess oil.
  6. To prepare the garlic herb sauce, mix mayonnaise, minced garlic, chopped parsley and chives, lemon juice, salt, and pepper in a small bowl.
  7. Serve the pork cracklings warm with the garlic herb sauce on the side for dipping.
