Ingredients

  • 4 large free
  • range eggs
  • 2 medium sweet potatoes, peeled and chopped
  • 1 cup chorizo sausage, diced
  • 1 small onion, finely chopped
  • 1 bell pepper, chopped
  • 1 clove garlic, minced
  • 1/4 cup fresh spinach leaves
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). In a large pan, heat 1 tbsp of olive oil over medium heat. Add chorizo and cook until browned, about 3 minutes. Remove from pan and set aside. Add remaining olive oil to the pan and sauté onion, bell pepper, and garlic until softened, about 4 minutes. Season with salt and pepper. Stir in sweet potatoes, cooking for another 8 10 minutes, or until they start to soften and become slightly golden. Add spinach leaves to the pan and cook until wilted. Make small wells in the sweet potato mixture and carefully crack an egg into each one. Season with salt and pepper. Scatter cooked chorizo around the edge of the pan, and place the whole pan in the preheated oven for 12 15 minutes or until eggs are set to your liking. Remove from the oven and garnish with fresh parsley. Serve immediately.
