  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp paprika

  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • Salt and pepper, to taste
  • 4 large eggs

Instructions

  1. In a medium sized skillet, heat the olive oil over medium heat.
  2. Add the onion and bell pepper, and sauté until softened, about 5 minutes.
  3. Stir in the garlic, and cook for another minute.
  4. Add the crushed tomatoes, paprika, cumin, coriander, cinnamon, salt, and pepper. Simmer for 10 12 minutes or until the sauce has thickened.
  5. Using the back of a spoon, make four small wells in the tomato sauce. Crack an egg into each well.
  6. Cover the skillet with a lid and cook over low heat for 5 7 minutes, or until the eggs are cooked to your desired level of doneness.
  7. Remove from heat and let it sit for another minute before serving. Garnish with fresh cilantro and parsley.
