Instructions

  1. Prepare the ribeye steaks by coating each with crushed peppercorns and a drizzle of olive oil. Season with salt to taste. Set aside.
  2. In a large pot, bring water to a boil. Cook potatoes until tender, about 20 minutes. Drain and return to the pot.
  3. Add heavy cream to the potatoes and mash until smooth and creamy. Set aside.
  4. Preheat oven to 375°F (190°C). In a large pot, bring water to a boil and cook cauliflower florets for 5 minutes. Drain and set aside.
  5. In a large skillet, heat the remaining olive oil over medium heat. Sear steaks on both sides for about 4 5 minutes per side, depending on desired doneness. Remove from pan and let rest for 5 minutes before slicing.
  6. For the balsamic glazed carrots, combine vinegar, honey, and butter in a saucepan over medium heat. Bring to a boil, then add baby carrots and cook until tender, about 8 10 minutes. Remove from heat.
  7. In a baking dish, layer cooked cauliflower, mashed potatoes, and Swiss cheese, repeating the layers until all ingredients are used. Bake for 25 30 minutes or until golden brown and bubbly.
  8. To serve, arrange sliced ribeye steak on individual plates, spoon creamy herbed mashed potatoes on one side, and cauliflower gratin on the other. Top with glazed carrots, and garnish with fresh parsley and thyme.
