Ingredients

  • 2 cups mango, peeled and diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice

Instructions

  1. In a large bowl, combine the mashed black beans, breadcrumbs or ground almonds, chopped onion, bell pepper, cilantro, garlic, cumin, salt, and pepper. Mix well until all ingredients are incorporated.
  2. Shape the mixture into 4 equal sized patties and set aside.
  3. In a separate bowl, prepare the tropical gazpacho by combining the tomatoes, mango, bell pepper, red onion, lime juice, cilantro, salt, and pepper. Mix well and refrigerate until ready to serve.
  4. For the spicy mango salsa, combine the mango, red onion, jalapeño, lime juice, salt, and pepper in a bowl and mix well. Set aside.
  5. In a large skillet, heat a small amount of oil over medium heat. Carefully place the black bean patties into the skillet and fry until golden brown on both sides. Remove from heat and set aside.
  6. To plate, place one black bean patty in the center of each dish. Surround the patties with a generous scoop of the tropical gazpacho. Top the gazpacho with a spoonful of spicy mango salsa.
