  • 1 cup dried chickpeas, soaked overnight
  • 2 tablespoons tahini paste
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground coriander

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon baking powder
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 pita bread, sliced and halved
  • 1 tomato, sliced
  • 1 cucumber, thinly sliced
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped red onion
  • 1/4 cup hummus
  • 1/4 cup tahini sauce
  • Olive oil for frying

Instructions

  1. Drain and rinse the soaked chickpeas well. In a food processor, combine chickpeas, tahini paste, cumin, coriander, paprika, salt, black pepper, baking powder, parsley, and lemon juice. Process until the mixture forms a slightly coarse texture.
  2. Shape the mixture into 1 inch balls and flatten them slightly. In a deep frying pan, heat about 1 inch of olive oil over medium high heat. Carefully lower the falafel balls into the hot oil, being careful not to splatter. Fry until golden brown on all sides, then remove with a slotted spoon and place on paper towels to drain.
  3. Assemble the pita sandwich by spreading hummus on one half of each pita bread. Add sliced tomato, cucumber, shredded lettuce, chopped red onion, fried falafel balls, and a generous drizzle of tahini sauce. Fold the pita in half and serve immediately.
