  • 6 large egg whites 1 1/2 cups caster sugar 1 teaspoon white vinegar 1 teaspoon vanilla extract Pinch of salt 1 cup heavy cream 1/4 cup confectioners' sugar 3 large kiwifruits, peeled and sliced Fresh berries of your choice (strawberries, raspberries, blueberries) for garnish Mint leaves for garnish

Instructions

  1. Preheat oven to 250°F (120°C). Draw three circles on parchment paper using a stencil or pencil, each about 5 inches in diameter. Turn the paper over so that the pencil markings are not in direct contact with the meringue.
  2. In a large bowl, beat egg whites, salt, and vinegar until soft peaks form. Gradually add caster sugar while continuously beating until stiff peaks form. Add vanilla extract and mix well.
  3. Spoon meringue into each circle drawn on the parchment paper, smoothing the tops to create a shallow well in the center of each.
  4. Bake for 1 hour in the preheated oven or until the meringues are hard and dry to the touch. Turn off the oven and let them cool completely with the door ajar. e) In a large bowl, whip heavy cream and confectioners' sugar until stiff peaks form. f) Place one baked meringue on a serving plate, and fill with whipped cream. Top with kiwifruit slices and fresh berries of your choice. Repeat for the next two layers, ending with a layer of whipped cream on top. g) Garnish with mint leaves, and enjoy!
