  3. In another bowl, beat eggs until light and fluffy. Gradually add the dry ingredients to the egg mixture, alternating with almond milk. Stir in melted butter and vanilla extract.
  4. Pour the batter into the prepared dish and bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool slightly.
  5. Heat sugar free apricot jam with heavy cream in a small saucepan over low heat until smooth. Strain to remove any solid bits.
  6. Pour the warm apricot glaze over the cake, allowing it to seep into the cracks for added flavor and moisture.
