  • 1 yellow squash

Instructions

  1. Preheat the grill to medium heat.
  2. Cut the papayas in half lengthwise and remove seeds. Set aside.

  6. In a large bowl, combine cooked quinoa, grilled vegetables, cilantro, lime juice, salt, and pepper to taste. Mix well.
  7. Fill each papaya half with the quinoa mixture, pressing down gently to pack it in.
  8. Serve immediately, garnished with additional cilantro leaves if desired.
